Paani Puri Recipe / Indian street food / Thuc an An Do

Ingredients:

Puri : Store bought from any indian store
Pani Puri masala 1 tbsp : mixture of masalas also available at any indian store
Mint leaves
Cumin powder
Salt
Lime
Garam masala (available at indian store)
coriander powder
Cilantro
4-5 medium boiled potatoes
1/4th cup soaked and boiled chickpeas
4-5 cups chilled water
green chillies
1 medium sized finely chopped onions
1 tsp granulated sugar


For the Paani (water mixture):

Grind together 10-12 mint leaves, 4 green chillies and 6 springs of cilantro to a smooth paste
Add the paste, some copped cilantro,1 tsp granulated sugar, 1 lime (or to taste), and salt(to taste) to the chilled water.
Mix well and keep refrigerated till you serve.

For the potato filling:

Grind together-
2 green chilies
4 sprigs of coriander leaves
5-6 mint leaves
1/4 cup chick peas, soaked and boiled
1 tbsp ginger-garlic paste

In a bowl take 1 medium boiled potato and mash it. Add the above paste and half a lime to the mashed potato and mix well to make a smooth paste.

Heat oil in saucepan
Add paste given above and stir fry for about 2 minutes.
Add cumin powder, coriander powder, garam masala and salt and stir fry for about a minute.
Add some water, about 1 cup and bring to boil.
Simmer till the mixture is thick paste.
While serving pani puri, add the rest of the mashed potatoes in this paste and mix wel

While serving:

Break the puri in center.
Add a little of the potato filling.
Fill the puri with the paani (water mixture)
You can also add little chopped onion to the puri if you like (optional).

Note: The lime, salt and masalas can be adjusted to your own taste/liking.
